Leaven is an artisan bakery specialising in hand made pastries and a range of breads, particularly sourdough and its pride is making high quality and delicious products lovingly by hand. Most of the breads are slowly proved in the fridge between 24 and 36 hours allowing the dough to develop its full flavour, with added health benefits in the process, as fermentation helps break down carbohydrates and gluten in the dough, making it more digestible and allowing our bodies to more easily absorb its nutrients. The process is kept simple and dough improvers and mixes are avoided.

Our journey.

Leaven began with our passion for bread and baking, and being a part of the growing trend in Egypt of changing the standards and quality of baked goods and food. For that, we spent a lot of time researching, practicing, and even traveling to learn about and how to make the best and most authentic breads. We chose a European style theme so that we can show a variety of breads that can appeal to a number of different tastes. We started selling at local farmer’s markets, specifically the Thursday market at the CSA, and Zamalek market on Saturdays. The farmer’s markets played a big role in introducing our products and also for us to meet customers and get direct feedback on their experience. This helped us develop the brand that is today, keeping this close relationship with customers! Over time, the recipes have developed alongside our growth so that we can maintain the quality of the product. Thankfully our customers always gave us honest feedback and stood by us; they understand the effort and time we invest in our products, and are always encouraging us which has really made the effort worthwhile.
